Cancer Pathways Soup of the Day

This Turkey, Kale and White Bean soup recipe is the perfect post-Thanksgiving treat.  It is loaded with fiber and is guaranteed to be a crowd pleaser.  Added bonus, it is easy to make!

  • 2 lbs ground turkey
  • 3 cups diced red onion
  • 2 cups diced celery
  • 2 tablespoons minced garlic
  • 1 tablespoon minced ginger
  • 8 cups chicken broth
  • 6 cups cubed and peeled butternut squash
  • 6 cups chopped kale
  • 15 ounces butter beans, drained and rinsed
  • 15 ounces great northern beans, drained and rinsed
  • 15 ounces adzuki beans
  • 2 teaspoons basil
  • 2 teaspoons thyme
  • 1 teaspoon cumin
  • 12 teaspoon sea salt
  • 14 teaspoon fresh ground pepper
  1.  In a large pot, saute turkey, onions, celery, garlic and ginger in 2 tablespoons of water until soft. Add broth, squash, kale, beans and seasonings. Bring to a boil.
  2. Cover and reduce heat to low and simmer until vegetables are tender. Taste and adjust seasonings as needed.
